Servings: 4 Prep time: 15 minutes Cook time: 20 minutes Total time: 35 minutes Difficulty: Easy
Ingredients
For the Pasta:
340 g (12 oz) spaghetti, linguine, or your favorite pasta
2 litres (8 cups) water, for boiling pasta
1 tablespoon salt, for pasta water
For the Sauce:
2 tablespoons (30 ml) olive oil
3 cloves garlic, minced (~15 g)
1/2 teaspoon red pepper flakes (optional, for a hint of heat)
1 can (800 g / ~28 oz) crushed tomatoes
250 g (1 cup) cherry tomatoes, halved (optional, for extra freshness)
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
1/2 cup (20 g) fresh basil leaves, packed, roughly chopped, plus extra for garnish
30 g (1/4 cup) grated Parmesan cheese (optional, for serving)
Equipment
Large pot or Dutch oven
Large saucepan or skillet
Colander
Measuring spoons and cups
Cutting board
Chef's knife
Instructions
Prepare Pasta Water (2 minutes): Fill a large pot with 2 litres (8 cups) of water. Add 1 tablespoon of salt. Bring the water to a rolling boil over high heat.
Start the Sauce (5 minutes): While the water heats, place a large saucepan or skillet over medium heat. Add the olive oil. Once shimmering, add the minced garlic and red pepper flakes (if using). Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.
Add Tomatoes and Simmer (10 minutes): Pour in the crushed tomatoes and add the halved cherry tomatoes (if using). Stir well. Bring the sauce to a gentle simmer, then reduce the heat to low, cover, and let it cook gently while your pasta cooks. This allows the flavors to meld.
Cook the Pasta (10-12 minutes): Once the water is boiling, add the spaghetti to the pot. Cook according to package directions until al dente (firm to the bite). Before draining, reserve about 1 cup (240 ml) of the starchy pasta water. This will be used to adjust the sauce consistency.
Combine Pasta and Sauce (3 minutes): Drain the pasta using a colander. Add the drained pasta directly to the simmering tomato sauce. Add the chopped fresh basil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Toss everything together until the pasta is well coated.
Adjust Consistency and Serve (1 minute): If the sauce seems too thick, add a splash or two of the reserved pasta water until it reaches your desired consistency. Taste and adjust seasoning as needed. Serve immediately, garnished with extra fresh basil and a sprinkle of grated Parmesan cheese, if desired.
Tips & Variations
Quality Matters: Use the best quality canned crushed tomatoes you can find; they make a big difference in the sauce's flavor.
Don't Forget Pasta Water: The starchy pasta water is your secret weapon! It helps emulsify the sauce and makes it cling beautifully to the pasta.
Fresh Basil is Key: While dried basil can be used, fresh basil truly elevates this dish with its vibrant aroma and flavor. Add it at the very end to preserve its freshness.
Vegan Option: Simply omit the Parmesan cheese for a delicious vegan meal.
Add Protein: Sauté cooked chicken breast, shrimp, or cannellini beans with the garlic for a more substantial meal.
Boost the Veggies: Stir in a handful of fresh spinach, some sautéed zucchini, or roasted bell peppers along with the crushed tomatoes.
